Massimo Bottura, the owner and patron chef of the multi award winning Osteria Francescana located in Modena, Italy brought his talented brigade to Cibo Trattoria for two days of cooking, dining and philosophical repast. His dishes have a rare combination of complex elaboration and poetic simplicity, with detailed research, reflection and passion. Jennifer McLagan – Chef & Author
Internationally renowned chef and cook book author Jennifer McLagan, originally from Australia now divides her time between Toronto and Paris. Jennifer’s stop in Vancouver while promoting her latest book Odd Bits, included hosting a dinner at Cibo where Cibo’s Executive Chef created a custom menu for that night based on Jennifer’s philosophy of using the whole animal. Using offall, brain and other innards of the animal, Jennifer helps people overcome their prejudices and creates dishes that takes “odd bits” to their rightful place at the table. It was an rare and special night for Cibo regulars and fans of this type of cuisine in Vancouver.
